Sunflower Seed Cookies
After the past few recipes (fried chicken and potato pie), I figure it’s about time I share another healthy recipe with you. These sunflower seed cookies taste delicious and make me feel good about getting my family to snack on something that has at least some healthy ingredients
I’ve made these with whole wheat flour as well and they turn out great either way. Be sure to adjust the sugar to your family’s taste.
Sunflower Seed Cookies
- 1 1/2 cups softened margarine or butter
- 1 tbsp. baking powder
- 3 cups all-purpose flour
- 1 cup shredded coconut
- 1 1/2 cups white sugar
- 1 cup sunflower seeds
- 1 tbsp. baking soda
Preheat the oven to 350F. In a large bowl, cream together the sugar and margarine. Add the flour, baking soda, and baking powder, mixing well. Stir in the coconut and sunflower seeds until well incorporated. Pinch off dough and roll into 1-inch balls, placing them on an ungreased cookie sheet. Bake cookies for 15 minutes or until lightly browned.
