Mojave Desert Chili
Ready for a really good chili? Then try this one… it’s a great cook ahead meal and our favorite for family night. I like to serve it with some corn bread or some homemade tortillas. Everyone gets a big bowl and we all get comfy in the living room to watch a movie together.
I’ve also made this for potlucks before and just brought it along in my crock pot. It’s always a crowd pleaser. I think the beef chunks are what really makes this recipe so tasty and satisfying.
Mojave Desert Chili
- 2 tbsp. vegetable oil
- 1 tsp. ground oregano
- 3 chopped garlic cloves
- 3 tbsp. chili powder
- 2 chopped onions
- 10 peeled and chopped tomatoes
- 1 chopped green bell pepper
- 2 chopped jalapeno peppers (optional)
- 3 lb. beef chunks (not ground)
- 1 can beer, your choice
- 1 tsp. ground cumin
Begin by heating the oil in a large skillet on medium heat. Add the vegetables and sauté them until softened, approximately 5 to 7 minutes. Remove the vegetables and lightly brown the beef chunks. If the meat has produced more fat, drain a good bit off, leaving just a little so things don’t burn. Return the vegetables and the seasonings to the skillet and cover.
