Healthy Zucchini Bread Recipe
If you are growing zucchini in the garden, or brought home more than you can cook at one time from the farmers market, consider making this healthy bread. It uses whole wheat flour along with oats, apples and of course plenty of grated zucchini. It makes for a nice moist and chewy treat everyone is sure to love.
I like to bake one of these breads to serve alongside a cup of soup, like this navy bean soup. It makes for a healthy and filling lunch or dinner.
Healthy Zucchini Bread Recipe
3/4 cup cooked oatmeal
1/2 cup honey
1/2 cup olive oil
1/2 cup grated apple
2 cups raw, grated zucchini
1 tablespoon vanilla
3 cups whole-wheat flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon cinnamon
Preheat oven to 350 degrees. In a large mixing bowl combine oatmeal, honey, olive oil, apple, zucchini and vanilla. Beat ingredients until well blended. In a separate bowl, sift flour, salt, baking soda, powder and cinnamon. Stir both bowls of ingredients above together into a new bowl and blend well. Pour mixture into 2 small bread pans. Bake for 1 hour. Allow bread to cool completely on a cooling rack before serving.
