I love to cook in my crockpot this time of the year because it doesn’t seem to heat up the house like the stove or oven do. When the air conditioning is running as fast as it will go and barely keeping the house cool, that’s an important consideration. Ok, enough complaining about the heat… after all I chose to live down here in the south

Crockpot Roast

5-6 pound roast
1 large onion sliced
1 container of mushrooms sliced
1 large green pepper sliced
2 large cloves of garlic sliced
Salt
Pepper
Beef broth
Cube potatoes
Baby carrots

Sear the roast in olive oil on all sides
Place all ingredients in the crock-pot and cook on low for 8-10 hours.
