We love to grill around here… not only does it taste great, it also means that I don’t have to do the majority of the cooking since hubby is the self-declared grill master. What makes the dishes from the grill truly outstanding is a good barbecue sauce – preferably home made. It’s a lot easier than you think. Here’s our favorite recipe (ssssshhhhh…. don’t tell him I gave it to you. It’s a family secret).

Homemade Barbecue Sauce

2 cup tomato ketchup
1/2 cup cider vinegar
1 TBSP sugar
1 cup water
2 stalks celery minced
2 bay leaves

This relish is also great with some fresh tomatoes or grilled veggies. Top some slices of fresh French bread for a tasty appetizer.

Cucumber Relish

2 large cucumbers, peeled, seeded and diced
Salt
1/4 cup minced red onion
1/4 cup red bell pepper
1/4 cup minced fresh mint
3 Tablespoons rice wine vinegar
1 teaspoon minced garlic
1 jalapeno, seeded and minced
1 1/2 teaspoons sugar

Wash, peel, and remove seeds from cucumbers. Dice cucumbers and set in a fine mesh sieve over the top of a bowl. Salt and allow to drain for one hour. Pat cucumber dices dry with a paper towel and place in a large bowl. Combine onion, bell pepper, mint, vinegar, garlic, jalepeno and sugar with cucumbers and toss well. Cover and allow to chill in refrigerator between one and four hours prior to serving. When ready to serve, remove from refrigerator and stir well.

We love making beef kabobs around here. If you add some big chunks of veggies (like bell peppers, zucchini and even small tomatoes), kabobs make a complete meal. We serve them with a salad and a nice chunk of rustic bread. Of course the Healthy Red Potato Salad, or the Couscous Salad would also make a nice side dish for any type of beef kabob you make.

Just make up a batch of this yummy kabob marinade, thread some beef on a skewer and grill them to perfection. Of course, since the meat is already cut into small chunks, they will cook up pretty quick and you’ll have dinner ready in no time.

Beef Kabob Marinade

1/2 cup soy sauce
1/2 cup white wine
1 1/2 cups pineapple juice
2 tablespoon red wine vinegar
1/4 cup sugar
1/4 teaspoon garlic powder
Seasoned Salt

Cut steak into cubes. Mix all ingredients well and allow steak kabobs to marinate in refrigerator for 4-10 hours. Before cooking, lightly sprinkle seasoned salt over steak chunks.

Do you have a favorite grilling marinade? If so, please share the recipe in the comment section below.
