			<content:encoded><![CDATA[<p>Yes, I admit it&#8230; I&#8217;m turning into quite the crock pot addict. I was so excited when I found a good recipe for my favorite soup. I love split pea soup, but I don&#8217;t always have a couple of hours to babysit it at the stove while it cooks into creamy goodness. Slowcooker to the rescue with this <a href="http://hillbillyhousewife.com/crockpotsplitpeasoup.htm">crockpot split pea soup recipe</a>. I start it in the morning and then just whip up a batch of spoon dropped biscuits right before I&#8217;m ready to eat. This makes for a great light supper or a filling and warming lunch.</p>
<p>There&#8217;s just something comforting about soup. I came down with a bad cold right after Christmas and lived on soup for a little over a week. Hubby started out with my stash of soups in the freezer, but eventually had to switch to the canned kind. There is just no comparison. Homemade soup is so much tastier and healthier. Thankfully I pretty quickly got well enough to at least start a soup from my stash of <a href="http://www.hillbillyhousewife.com/crockpotrecipes.htm">slowcooker recipes</a>. While I crawled back in the bed for a long nap, the soups cooked themselves. Got to love it and I&#8217;m sure homemade soup was a big reason why I got well rather quickly.</p>

<p>This usually makes enough to feed my family for dinner if I make a cornbread to go with it and if I&#8217;m lucky there&#8217;s even enough leftover for me for lunch the next day. I think next time I&#8217;ll increase the ingredients and make some extra for the next day. </p>

			<content:encoded><![CDATA[<p>We&#8217;re pretty busy during the summer and try to get out and do stuff as much as possible. A lot of days are spent at the pool to beat the heat. Of course we are all hungry by the time we finally make it home. That&#8217;s why I started using the crockpot a lot. Dinner can cook itself while we are out having fun. Here&#8217;s my favorite way to cook pasta during the summer.</p>

<p><strong>Crockpot Spaghetti Recipe</strong></p>
<p>1 16 oz package of spaghetti cooked<br />
1 16 oz container of sour cream<br />
1 package of mozzarella cheese, cheddar cheese, and sharp cheese<br />
Sauce:</p>
<p>1 cup of beef broth<br />
4 cans of whole tomatoes<br />
2 can of tomato paste<br />
4 can of tomato sauce<br />
Chopped basil<br />
Chopped cilantro<br />
Chopped sage<br />
Chopped oregano<br />
Chopped onion<br />
Chopped garlic<br />
2 pounds of ground beef</p>
<p>In a saucepot, combine all of the tomato products and broth and bring to a simmer. Brown the herbs and garlic and onion with ground beef and add to sauce pot.</p>
<p>Put all the ingredients into the crock-pot and cook on low for 4 hours.<br />
It is important that you do not add hot liquids into a cold crock-pot. Doing so could fracture the crock.</p>
<p>This is a great recipe for kids to get involved in. there is no danger of getting hurt, however supervision is needed when children are in the kitchen.</p>

<p><strong>Crockpot Roast</strong></p>
<p>5-6 pound roast<br />
1 large onion sliced<br />
1 container of mushrooms sliced<br />
1 large green pepper sliced<br />
2 large cloves of garlic sliced<br />
Salt<br />
Pepper<br />
Beef broth<br />
Cube potatoes<br />
Baby carrots</p>
<p>Sear the roast in olive oil on all sides<br />
Place all ingredients in the crock-pot and cook on low for 8-10 hours.</p>

<p>Here&#8217;s one of my favorite side dishes to make. It&#8217;s great for holidays too when you have all these other things cooking in the oven.</p>
<p>Crockpot Vegetable Casserole</p>
<p>2 cups carrots, cut in strips, cooked &amp; drained<br />
2 cups celery, diced<br />
1 onion, diced<br />
1/4 cup green pepper, diced<br />
1 pint tomato juice<br />
4 cups green beans, drained<br />
1 teaspoon salt<br />
dash of pepper<br />
3 tablespoons tapioca<br />
1 tablespoon sugar<br />
2 tablespoons margarine</p>
<p>Combine all of the ingredients in slow cooker. Dot the top with margarine and cook on a low setting for 8 to 10 hours or on high for 4 to 5 hours.</p>

			<content:encoded><![CDATA[<p>My sister-in-law got me started on cooking a whole chicken in the crockpot. About once a week, I defrost a chicken, stick it in the crockpot and fill it up with chicken broth. I turn it on high and cook it for 5 to 6 hours until the chicken starts to fall apart.</p>

After the liquid (and the chicken) had a chance to cool, I separate all the good meat from the bones, organs and skin of the chicken and store the pieces of chicken meat in the fridge.</p>
<p>Throughout the week we use the chicken  to make chicken salad, chicken and cheese quesadillas, burritos and enchiladas and just about any other chicken dish that calls for cooked chicken meat.</p>
<p>I also save the chicken stock to cook with later, or turn it into a quick pot of soup by adding some veggies, rice and pieces of the chicken meat. Of course it is also the perfect start for a pot of chicken noodle soup.</p>
