Best Cheese Enchilada Casserole Recipe
Are you tired of eating the same old casserole dish? Mix things up with this super easy cheese enchilada casserole. It’s quickly becoming a favorite in our house and is on the menu at least once week. Not only is it easy and fast to put together (and of course it tastes heavenly), it is also a very economical dish.
Fix it for lunch or dinner this week. Just add a side salad and you’re set for a homemade family meal. This dish is also a potluck favorite and easy to prepare ahead of time.
Cheese Enchilada Casserole
6-8 cups enchilada sauce
8 cups shredded cheese (cheddar and monterey jack)
2 tablespoons taco seasoning mix (1.25 oz packet is equal to 4 Tablespoons)
18 corn tortillas
Preheat oven to 375 degrees. Spray a 9×13 inch baking dish with non-stick cooking spray. Add 1/2 taco seasoning mix packet to bag of shredded cheese and shake well. Cover bottom of baking dish with thin layer of enchilada sauce. Cover sauce with 6 corn tortillas. Top with cheese. Repeat layer twice.
At this point you can cover the baking dish and refrigerate or freeze the enchilada casserole for later use. Just defrost completely before baking, then follow the directions below.
Cover with foil and bake covered for 35-45 minutes. Remove foil and bake uncovered last 5-10 minutes.
