Stuffed Bell Pepper Recipe

I love to cook once and then make 2 dishes out of it. Here’s one of my “secret” recipes for putting a dinner together in a flash. Anytime we cook spaghetti with meat sauce, I make some extra and freeze or refrigerate it. I do the same when I cook plain rice. When I have both the sauce and the rice sitting in the fridge for me, I make these stuffed peppers. Of course you could also cook them from scratch. Have you ever made scones? I didn’t for the longest time. I figured they were just to complicated to make them and never tried - until last fall when a friend shared this easy recipe with me. Crockpot Spaghetti

We’re pretty busy during the summer and try to get out and do stuff as much as possible. A lot of days are spent at the pool to beat the heat. Of course we are all hungry by the time we finally make it home. That’s why I started using the crockpot a lot. Dinner can cook itself while we are out having fun. Here’s my favorite way to cook pasta during the summer.

Asian Honey Chicken Wings

We love wings around here and they are actually still quite inexpensive (especially compared to a lot of other meat cuts). I like making these because they are mild enough for even kids to enjoy. Easy Lemonade Cake

You have to love the simple pleasures of summer and for our family one of them is this lemonade cake. I’m including the directions for a great frosting for the cake, but to be honest, I don’t always get a chance to make and spread on the frosting before my family gobbles up the cake.

Homemade Barbecue Sauce Recipe

We love to grill around here… not only does it taste great, it also means that I don’t have to do the majority of the cooking since hubby is the self-declared grill master. What makes the dishes from the grill truly outstanding is a good barbecue sauce - preferably home made. It’s a lot easier than you think. Here’s our favorite recipe (ssssshhhhh…. don’t tell him I gave it to you. It’s a family secret).

Strawberry Pecan Treat

Summer is strawberry season and these delicious berries make for all kinds of yummy desserts. Here’s one of my personal favorites. I love how easy it is to put together, but at the same time, the toasted pecan nuts make it taste very gourmet. I have yet to come across someone who doesn’t enjoy this delicious dish. Favorite Crockpot Roast

I love to cook in my crockpot this time of the year because it doesn’t seem to heat up the house like the stove or oven do. When the air conditioning is running as fast as it will go and barely keeping the house cool, that’s an important consideration. Ok, enough complaining about the heat… after all I chose to live down here in the south :)

Simple Apple Cake

Yankee Doodle Noodle Salad

I love to make pasta salad in the summer. We tend to grill a lot when it’s hot and adding this dish makes it a complete meal. Most of the time I go with one of the traditional noodle salad recipes (either a mayo based dressing one, or an italian version with olive oil, vinegar and tomatoes), but every once in a while we like to mix things up.
